It sounds so simple, but it’s a dish my parents never forget to order at any Taiwanese restaurant here in the United States. But once you go Ay-Chung, you never go back to any other.

Made simply, but with all the care in the world. They’ve perfected their recipe over the decades and have lines around the block. Unlike your traditional noodle restaurant, this place is to-go only. No tables, a few stools outside, and a bunch of people sitting along the curbs. If you are coming by subway, get off on XiMen station and head towards Emei Street. It’ll be right there on your left!
